Abstract

|
The nutritive value of foods is the most essential and fundamental data in food adminstration, nutrition surveys, dietary clinics and in the conduct of nutritional education. The nutritive values of 337 kinds of selected domestic foods were analyzed and reported in several previous reports.
In this report, another 20 kinds of domestic foods were analyzed for their proximate components (proteins, fats, carbohydrates), manerals (ash, phosphorus, calcium, iron) and vitamines (vitamine A, thiamine, riboflavin, ascorbic acid, niacine).
The foods were smapled at randum from the markets or cultivating fields and analyzed by means of provious methods.
The results are shown in the talbe and all kinds of rest foods will be studied continuously so that the Korean food composition table can be published.
